Hope you all had a wonderful Thanksgiving! Since we have snow and woke up to 5 degree temperatures I thought I would stay in and share my Thanksgiving with you. Our holidays are always double the fun because we eat with my family as well as with my in laws so we always get two big meals! My family will usually have their meal early around 11 or 12 and my in laws will have their meal later around 5 or 6. It is an all day eating feast!
Our families have been awesome about accommodating our plant based lifestyles and have gotten used to it after 5 years. They will make all the side dishes vegetarian and use a vegetable broth or gravy. We will usually bring our main dish which is a mock meat of some kind. The past few years we have gotten a wellington from Native Foods which is delicious. It is seitan (a wheat gluten protein), stuffing, sweet potatoes, kale and cranberries all rolled into a puff pastry….even the meat eaters eat it! Most of the time, I just fill up on all the side dishes and desserts anyways!
Even with all the wonderful food the part I enjoy the most is being with family. This year, my 6 week old niece Hailey stole the spotlight. As soon as she arrived, no one was thinking about food anymore….we even completely ignored the pies and didn’t even have dessert!

After snuggling with these two we then headed up to the in laws house for plate #2! We cooked the wellington for dinner with them.
My niece Ashleigh is also a vegetarian so we like to save our main dish to eat with her. She is coming up on her 3 year vegaversary and doesn’t take a serious pic!

We didn’t get back home until midnight but it was a great day visiting with family and stuffing our faces….now I need to hit the gym to burn some of it off!
