Happy Friday! I have just a few things I am excited about sharing so I thought I would dump them all into one post for some Friday fun.
First, we bought a few cookbooks this week…the funny thing about being a vegan is that you have to learn how to cook if you want to eat!
One of our friends recommended this cookbook because it is good at explaining how to prepare whole beans and grains like rice. It also has great detail about spices and has amazing dishes. Some recipes do include meat but we won’t be adding meat or we will be substituting in order to make it vegan.
We also got this vegan cookbook which hello looks awesome I mean OMG this food looks so delicious I couldn’t resist! I am excited to start cooking and trying out some of these yummy recipes. What I eat Wednesday posts should be getting more intriguing so stay tuned!
Yesterday I also received my first pair of Tom’s shoes that I finally ordered…I am super jazzed to wear these all summer long.
I also got the hubs a pair.
Tonight we are going to a friend’s vegan potluck so the hubs made a bunch of his seitan wings (our version of buffalo wings) last night. He made extra so we could eat some for dinner.
He makes seitan from scratch and adds a bunch of veggies with it. Then he adds some Frank’s red hot sauce and we pile it on some brown rice mmmm sooo good and spicy! It tastes like meat which is crazy….even meat eaters think it is meat!

I’d also like to wish all the mother’s out there a very Happy Mother’s Day! We will be spending time (eating) with our mom’s this weekend even though it will be snowing on Sunday ugh snow in May. I love you Mom’s! What are you doing for Mother’s Day?
